Ingredients for the Chocolate Pots:
100g mini marshmallows
40g soft unsalted butter cut into cubes
2o0g dark chocolate (minimum 70% cocoa solids) broken into pieces
60 ml fresh orange juice
2 x orange zest
280ml double cream
This serves 6 people easily but it does depend on the size of your espresso cup
Decoration: One Packet of Maltesers
Now this is a pretty quick pudding to make and it does have a lovely mousse-like texture but it's definitely more of a rich chocolate pot. Right, for starters, get your 6 espresso cups out and set on the side. Then in a large heavy-based saucepan put all the marshmallows, cubed butter and orange juice and place on the hob over a medium heat.
Keep the heat gentle and stir intermittently so that the contents melts and once it has remove from the heat. Whilst the chocolate, butter and marshmallows are melting, whip the cream until it is thick and stands up but be careful not to over whip.
Let the chocolate mix cool a little before you fold the cream in and don't be surprised that you will loose a little thickness as you mix into a smooth mixture .
Pour into the 6 espresso cups and let them begin to set before you decorate with your one Maltesers, then chill in the refridgerator until you want to serve. The bonus of this dish is that someone has to finish up the remaining Maltesers, I find they taste great with a cup of tea whilst you put your feet up.
