The beauty of this sauce is that rather than an off the shelf product, the chilli/heat level can be altered to specific family tastes. The recipe below makes a picante version, so to make it a little milder, don't use as many chillies.
Ingredients for Sweet Chilli Sauce:
5 Fresh red chillies
3 Garlic cloves (peeled)
750ml White Wine Vinegar
500g Caster Sugar
Take FOUR of the chillies, prepare them by simply deseeding and removing the core, then pop them directly into a food processor. Then take the last chilli and cut in half, removing the green head and pop that directly into the food processor to. Add the peeled garlic cloves and begin to process until finely chopped.
Pop a saucepan onto a medium heat and add the vinegar and sugar, let the sugar begin to dissolved and then add the chopped chilli and garlic mix. Stir once or twice to ensure that all the sugar has dissolved into the mixture, now turn up the heat, bring to a boil, then reduce the heat so that the mixture is simmering constantly.
Now leave for the magic to take place, let the mixture thicken and reduce which will take about 35-40 minutes. Continue to stir every once in awhile and once the sauce has thickened, pour into sterilised airtight bottles and seal shut once the mixture has cooled.
Then store in a the larder, cellar or wherever you keep your jams, preserves etc. This sauce doesn't need time to mature, it can be used immediately - yippee.
