This recipe can be made with Duck, Goose or Hen eggs. If you use Goose eggs, then I would advise only one per person, as they are enormous. I'm just greedy and therefore won't have less than two eggs at any time but for some this can be a little rich. However, if you're on the 5:2 diet or weight watching, you can't go wrong as in one (sensible) portion of hen egg on steamed asparagus, there are 114.1 calories (fat: 6.0g, Protein:10.5g, Carb: 6.9g, Fibre 3.0g) - if you add 2 slices of Parma Ham that's a further 60 calories.
But for the best taste, I'd advise a little frying and two eggs!
Ingredients for Poaching Eggs:
100ml white wine vinegar
25g table salt
4 x duck or hen eggs
Ingredients for Asparagus :
500g (or large bunch) Asparagus
Knob of butter
As always, get your ingredients out on the counter, weighed and chopped.
Chop the woody ends off the asparagus and wash them. Pat dry and place to one side. Place the water, white wine vinegar and salt in a tall pan and bring to the boil. While this is happening, slowly heat up a gridle pan (or frying pan) and melt the butter - making sure it covers the whole of the pans base.
